Spaghetti Bolognese
Pasta bolognese is one of Matt's favorite recipes, and over the years we've customized the recipe to make it our own. Deep, rich flavors are created as the meat sauce simmers. Ladle it over pasta and enjoy an old-world meal that fills your belly and your soul.
Ingredients
3 peeled carrots
3 stalks of celery
1 peeled onion
6 slices bacon
1 pound ground beef
¼ cup white wine
¾ cup chicken broth
2 Tblsp. tomato sauce
¾ tsp. salt
½ tsp. pepper
¼ cup heavy cream
1 pound cooked fettucine
grated parmesan cheese for garnish
Serves 6
Directions
Dice bacon and cook in large saucepan or Dutch oven over medium heat till cooked but not crisp and until most of the fat is rendered. Increase heat to medium high, add vegetables and cook about 5 minutes till onion is softened. Add ground beef and cook till no longer pink, about 8 minutes, stirring occasionally. Add all other sauce ingredients except heavy cream. Simmer over medium-low heat about 45 minutes, stirring occasionally, until most of the liquid is absorbed. Turn off heat, stir in cream. Serve over pasta and sprinkle with parmesan.
